Garden fresh green salad

Fresh green salad with heaps of flavour and crunch!

For about 4-6 servings you will need:

4 zucchini, topped, tailed and grated
2 cups fresh baby spinach, shredded or cut with herb scissors
2 tbsp shredded fresh coriander (optional)
3/4 cup finely chopped sun-dried tomatoes
1 avocado, diced
5-6 red salad onions (similar to spring onions), finely sliced, or half a small red onion, diced
40g pine kernels


30 ml white wine vinegar
40 ml olive oil
10 ml sesame oil, depending on your taste
1 tsp honey
1 tsp Dijon mustard

salt and pepper

Super easy to make, all you do is mix all the salad ingredients together and toss with the dressing and some salt and pepper. A perfect side for a braai!
